Wendell made our first batch of Feta last night. He was cutting the curd at 3am! A very tired cheese whiz he is :-) This cheese will age for one month before it will be ready for sale. All of the does are doing their job, too. We have had good production considering it has been a long hot summer. We are all looking forward to the cooler weather.
